What is Sodium Ascorbate?
Sodium ascorbate is an organic substance, the chemical formula is C6H7O6Na, white to yellowish white crystalline powder or particles, odorless, slightly salty taste. Decomposition temperature 218ºC, dry state is more stable, the light will deepen the color, moisture absorption and slow oxidation decomposition in aqueous solution. It is more soluble in water (62g/100mL) than ascorbic acid, and the pH of 10% aqueous solution is about 7.5.
Sodium ascorbate is a white or slightly yellow crystal or crystalline powder; Odorless; In the air is more stable, light color gradually dark. This product is easily soluble in water, slightly soluble in ethanol, insoluble in chloroform or ether. The pH value of 2% water solution was 6.5-8.0. Dry air is relatively stable after moisture absorption and in aqueous solution will slowly oxidative decomposition, especially in neutral or alkaline solution will slowly oxidative decomposition.
Sodium ascorbate is sodium salt of ascorbic acid (commonly known as vitamin C), which is approved for use as a food additive in many countries. Sodium ascorbate is consisted of a combination of sodium and vitamin C, which commonly serve as an antioxidant and an acidity regulator in pharmaceutical manufacturing and in the food industry.

Application of Sodium Ascorbate:
1. It can be used as an antioxidant in meat and other foods.
2. As a nutritional fortifier for food, it can also be used as a color protector and antioxidant.
3. Nutritional supplements; Antioxidant; Color protectant. The use of ascorbic acid is essentially the same. The physiological function of 1g of this product is equivalent to 0.9gL of -ascorbic acid. Ham, sausage, fish cake and so on use sodium salt to fix meat color, maintain freshness. If ascorbic acid is used, the pH value decreases and the water holding capacity is affected. It can prevent oxidation and stabilize color of frozen aquatic products.
4. It can be added to ham, sausage and other meat products to prevent discoloration caused by oxidation of hemoglobin and to maintain the flavor of meat products.
5. It can also be used to maintain the flavor of fruit juice and jam and as a fortifier of VC, which can be used according to the production needs. The maximum use was 1g/kg.
